A rainy weekend morning, more than a dozen people in the
queue, a restless group of eight including a budding food blogger and they all
have spent close to forty five minutes waiting. What do you think is going on
in their minds! Yes, you are spot on if your answer is “the food better be out
of this world!”
If you faced this situation in Darlinghurst, you most likely
were waiting outside one of the most celebrated and busy restaurants of Sydney
known as ‘Bills’.
After the long wait, as soon as I stepped in, I was drawn
towards the different languages being spoken at the tables, something that
pointed towards the huge following of Bills among local, interstate and
international travellers.
The restaurant greets you with a relaxing ambience, a
communal table with fresh flowers, coffee table books and a dozen champagne
bottles well placed on the shelf.
Hungry, thirsty and tired, we do not waste any time in
ordering coffees and juices for the table. The coffee is served hot but is not
something that wows me. On the other hand, we admire the varied juices on
offer. The joyous colours and the refreshing zing cheer the table.
Slowly and steadily the breakfast starts arriving. The
popular classic ricotta hotcakes with banana, honeycomb butter and a pot of
maple syrup are unashamedly delicious. The hotcakes are light, soft and fluffy.
However it is the sweet and salty honeycomb butter that adds the X factor to
the dish.
Someone once said that you always eat with your eyes first!
Absolutely true for the zucchini fritters! Every element of this dish was
visually spectacular whether it was the deep fried egg, haloumi, parsley salad,
tahini yogurt or pickles. The zucchini fritters were crispy, golden and
flavoursome. The pickles were zesty and the seediness from the sesame seeds in
the tahini gave the dish a nice shape.
For the conventional big breakfast eaters, the scrambled
organic eggs served with sourdough toast, bacon, cumin roast tomato, miso
mushrooms, pork and fennel sausage will satiate your hunger. A special mention
for the lamb sausages, undoubtedly the best I’ve ever had.
For the one’s who love great things in a small package, try
the brioche roll with chilli fried egg, bacon, rocket and spiced mango chutney.
Both the chilli fried egg and the spiced mango chutney have enough kick to
produce tongue-popping flavours. The roll is soft and crunchy too.
To finish of things a sweet kick was mandatory. The hot
chocolate with Callebaut (Belgian chocolate brand) was small, soothing and
sweet enough to do that for me.
The verdict! To experience great things in life you have to
be patient! The breakfast at Bills just did that for me!
